Dave, my husband, was diagnosed with testicular cancer yesterday. I feel like a bomb was dropped on us. It came out of no where and now we are left here having to pick up the pieces. We have doctors appointments and things going in the next several days which will be followed most likely by surgery and chemo.

I was at Walmart for some other things and while I was there I was able to price match the Airwich Ultra iMotion. They were out at Target but had them for $5.99 (WM price $13.88) I used a $6 coupon and got them for .01 overage.

Midnight Krogering

Well midnight is an hour we passed :) We (Amanda and I) left around 9:30 and didn't get home until 3:30 am. It was a LONG night! First we started at a store that we quickly realized wasn't 24 hours! (OOPS) And thanks to the miracle called GPS we were able to find another 24 hour store nearby.

It was crazy there at Kroger! The line wrapped all the way down an isle (here is me standing half way through) luckily there was another person in the store who knew how to ring up and he came out so we had 2 cashiers, but we had to bag the food ourselves. Not fun when you are trying to watch coupons! I hsee now that I had 4 $1 coupons missed over all, equalling $8 gone. I need to run back up to Kroger (tomorrow, NO WAY am I going back today, lol) and get my $8 back!

Now these pictures aren't all inclusive. We already put all cold things away, ice cream, hotdogs, nesquick, yougurt etc.

I NEED A BREAK! I just don't want to coupon right now.... well, thats not entirely true. I don't want to grocery coupon. I do NOT want to set foot in a Randalls or Kroger until the new Kroger right by me opens. I don't know what my deal is! CVS and Walgreens aren't a big deal but it just seems that ever since DD broke her arm at a "Free" thing that ended up costing me around $150 I'm just a bit burned.

I will still post what I do buy and I'm still planning to stay within my $100/mo budget, but I just need a bit of a break!

Well I guess not really because I haven't been doing any shopping, but we've been a bit busy. Friday we went to take part in Cow Appreication day at Chick-fil-a. Come dress up like a cow and get free food...
Well, so much for saving money with the free food. Peyton's (on the left) arm was broken while in the playground area. So really, the free food thus far has cost me a $100 ER copay, $25 I'm out for swim lessons and I am sure at least a few $40 co-pays for specialist visits. So yeah....fun stuff.

Moral of the story... watch your kids like a hawk.

First, Sorry for the lack of actual pictures!

I believe I mentioned that I have been extremely busy the last few weeks, I know I did on my other blog, but I just want to reiterate that.

I went to Kroger a few days ago to get some essentials, bread, eggs, cookies...??? yes, DH things those are essential, LOL. I also found some manager's special Jennie O ground turkey for $1.29/lb, so I got 4 of those. My total was $12.74 I also went to HEB a few days ago for fresh fruit.. my total was $12.39

Last night we went to Walmart to get some much needed groceries. Since DS is now on table food we needed some baby friendly foods for him. We also needed to restock our pantry on some things like black olives, gravy mixes etc. I also got a few things with deals

Cleaning up the Shelves

Ok, it isn't an understatement when I say our house seriously lacks storage! The only closet not in a bedroom is our pantry in the kitchen. Whoever designed this house must not have much stuff. I must say that we have been very VERY blessed with people who have passed on alot of their unneeded things to our foster care efforts. I have been putting things wherever I can, but 2 days ago, someone donated a fantastic dresser so I was able to move some things around. I also did some reorganizing and purging. Here are the befores and afters of the bookshelf and the metal shelves in the closet of the will be foster children's room.

We used this bookshelf in Parker's room holding diapers, wipes and things, and now we needed it for storage. I don't have a before picture of the books as they were all over the house, but now we have a nicely organized bookshelf!

Happy June, Everyone! I love the month of June. It used to mean getting out of school and summer break. Now it means longer days, more family time, and grilling out! Our move to Texas two years ago left us with extremely hot summers, but we do still enjoy them ... as long as we can safely return to our A/C!

Erin at Closing Time wrote about making Mickey Mouse tuna melts for her kids. This was perfect timing! (Thanks Erin!) Last week I realized that DD (who will be 4 soon) has never had tuna, so I bought a can. I figured this would be the best way to have her try it out!

From my deals the last week, I have alot of pork. I don't normally cook any sort of pork beyond bacon, I'm just typically not a fan. I tried making pork chops a while ago and DH and DD loved it, but the grissel and bone just didn't do it for me. So... I bought boneless pork chops and make them with this recipe!

INGREDIENTS
1/2 cup brown sugar, firmly packed
1/2 cup apple juice
4 tablespoons vegetable oil
1 tablespoon soy sauce
1/2 teaspoon ground ginger
salt and pepper to taste
2 teaspoons cornstarch
1/2 cup water
6 boneless pork chops

DIRECTIONS
Preheat an outdoor grill for high heat.
In a small saucepan, combine brown sugar, apple juice, oil, soy sauce, ginger, salt , and pepper. Bring to boil. Combine water and cornstarch in small bowl, and whisk into brown sugar mixture. Stir until thick.
Brush grate lightly with oil before placing pork chops on the grill. Cook over hot coals for 10 to 12 minutes, turning once. Brush with sauce just before removing chops from grill. Serve with remaining sauce.

My Review:

I actually made this just as the recipe calls for and it was really good! It gave me some hope for incorporating pork into some of my meals. Dh, DD and even DS really liked this. Will definitely having it again!

Recipe Review and Works for me Wednesday

So I am doing a combo today...its a little late for Works for me Wednesday, but still...its Wednesday!

Ok... so for my recipe review today I decided to try a new meatloaf recipe I found...and of course I never follow the book so here is the actual recipe.

But alas....here are the changes I made...

I added celery, about 2 stalks chopped

Did a bit of onion and onion soup mix

omitted salt due to the soup

I didn't do the sauce on the bottom, that just doesn't make sense to me, wouldn't it get all baked and stuck? I made a glaze instead and added Worcestershire sauce

I also only did 1/2 cup milk

I used bread crumbs instead of saltines

Wow, even the same recipe? LOL

Well here is where the WFMW comes in... instead of using a loaf pan, I used muffin pans. It cuts the time down quiet a bit and it isn't any more difficult. The glaze does get baked on the top (anyone with ideas on how to prevent that??) but other than that, I like to do it this way sometimes.

As far as the actual taste of the dinner goes, I thought it was good. DH says it taste like my other recipe (which uses brown gravy instead of onion soup, and a few other changes....geez MEN!) lol Anyway, I am sure it was because my glaze was the same. I guess I can do meatloaf either way now depending on what I have. DS (11 months) ate this up! He loved himself some meatloaf and corn!

Cook Time: 20 minutes (in muffin pans)

Will we make this again??....darn tootin :)

I hate it when cashiers/managers decide to make up rules. They decided to limit me...fine, I don't have a problem with that, but if they were consistant it would be nice. Family Recipe Review

As promised, I did a review of this calzone recipe.

As suggested by the reviewers I decided to use the Philsbury Pizza Crust instead of the homemade bread. We also used pizza toppings instead of spinach.

PREP TIME 1 Hr (if made by recipe directions)
COOK TIME 30 Min
READY IN 1 Hr 30 Min

INGREDIENTS

1 (15 ounce) container ricotta cheese
2 eggs
2 tablespoons dried Italian seasoning
3 cups shredded mozzarella cheese
1 cup freshly grated Parmesan cheese
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
salt and pepper to taste
1 (32 ounce) package frozen white bread dough, thawed

DIRECTIONS
Preheat the oven to 400 degrees F (200 degrees C).
In a large bowl, mix together the ricotta cheese, eggs, Italian seasoning, mozzarella cheese, Parmesan cheese and spinach. Set aside.
Divide the bread dough into 8 pieces and roll each piece out to about an 8 inch circle. Spoon about 1/2 cup of the ricotta filling onto each circle, fold over and seal the edges. Place onto a greased cookie sheet.
Bake for 30 minutes in the preheated oven, or until nicely browned on the tops and bottoms.

My Review

I think that if I used some other kind of crust, this would have been better. It really reminded me of a biscut. And maybe more regular cheese and not as much ricotta. I will be trying a different calzone recipe next time! We all ate it, it just wasn't the best.

I was inspired by another blog to try this challenge for myself. $1200 for the year. I was thinking that it wouldn't be possible, but today is the 28th, and I don't think I will be shopping before the end of the month and I have spent $98... so woo hoo!

Ok, first, word to the wise as far as couponing at Walmart. They are less picky than other stores about coupon usage, there isn't a limit on how many identical coupons you can use, however, the machine tends to freak out when you go over 40 coupons or $40 in coupons. - Speaking of, when i first started couponing and read that, I was like "how on earth could you have that many coupons" LOL

Anyway....I made it freak today. LOL I didn't even think about it when I was going up there, I should have broken up my transactions. (I had 44 coupons equaling to $41.90)

Oh, and at my Walmart the Aveeno was $4something, so I didn't get it. Maybe there is a smaller bottle at some stores, but I was bummed :(

My OOP could have definatly been lower, but there were items I needed/wanted (you hardly see hard core couponers buying frozen pizzas, LOL) but there are some things I will pay for.

Acutally, here is a little tangent for you, you will see some couponers who won't pay for certain things and others will. I, for one, will always pay extra for chicken breasts, deboned and deskinned. Other couponers wouldn't even dream of not buying the whole chicken and breaking it up. I can't (and won't) do that. I also don't buy crappy meat...can't do it. That is why I bought my high grade meat from Sams in bulk. There are probably some things that I won't pay for that others would. But the value of a dollar means different things to different people. Ok, rambling done :)

4 pita breads (6 inches in diameter)
1/2 cup plain yogurt
1 tablespoon chopped fresh mint leaf or 1 teaspoon dried mint leaves
1 teaspoon sugar
1 small cucumber, seeded and chopped (3/4 cup)
1 pound ground lamb or beef
2 tablespoons water
1 tablespoon lemon juice
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano leaves
1/4 teaspoon pepper
2 garlic cloves, finely chopped
1 small onion, chopped (1/4 cup)
2 tablespoons vegetable oil
2 cups shredded lettuce
1 medium tomato, chopped (3/4 cup)

1. Split each pita bread halfway around edge with knife; separate to form pocket.
2. Mix yogurt, mint and sugar in small bowl. Stir in cucumber.
3. Mix lamb, water, lemon juice, salt, cumin, oregano, pepper, garlic and onion. Shape mixture into 4 thin patties.
4. Heat oil in 10-inch skillet over medium heat. Cook patties in oil 10 to 12 minutes, turning frequently, until no longer pink in center. Place cooked patty in each pita pocket. Top with yogurt mixture, lettuce and tomato

First, I have to start out by saying, I probably didn't do this recipe any justice. I just saw ground beef and out of habit started cooking it in the pan and chopping it up. This was suppose to be done in patties and since the way it was cooked deviated from the recipe, I wanted to give it the benefit of the doubt!!

So I ended up putting the patty ingredients in with the pan after draining the grease.

My Review
This was something different to try and it was good, but there would definetlybe some changes that I would make. First, the cucumber sauce needs to be pureed, or more thin than using "chopped" cucumbers. It tasted good but the texture wasn't quite right. DH and I both ate it, but 3 year old DD didn't care for it at all.

Ok, first, I should have said that I got this idea from my fab cousin Michelle at SavingSomeGreen, I totally copied her (Thanks for the idea!!) So here we go..

This is my son's room (like the decor doesn't give it away) and despite his lack of ability to make a mess in here, we have one!

Our biggest task? Sorting out all of the clothes that are too small or too warm for our steamy Texas Spring. This was heartbreaking. Here I am trying to make deals and I am pulling out clothes that have never been worn! I also pulled out the bumper a few days before and it was time to remove the mobile (since he pulled it down!) we also sold our glider at the garage sale so we pulled the crib over to center it on the wall, then had to move the pictures.

Organizing our "dumping zone"

About 4 months ago, for pure convience, we moved our desk out of the office and into our living area. This has made it much easier to keep an eye on little ones while getting some things done on the computer. However, the desk is the first big flat surface as you come in the front door. It quickly became the dumping ground for everything...mail, coupons, bills, and I am notorius for my sticky notes. So as you can imagine, we are constantly battling this beast!

I came across OrgJunkie and got some inspiration to clean up this area!

Part way through - OrgJunkie says to pull everything out before organizing, I was amazed at how much junk this helped me find and be able to toss! Great idea!

And some after pictures - the yellow bag is of borrowed books so that will be gone soon :)

Now lets see how long we can keep it this way!!

As I said in my recipe review, I love trying new recipes. But I found that printing them left them shoved in my cabinte and I could NEVER find what I was looking for. So, I started a binder. This way I have all of my recipes in one place. I love this method because with the page protectors, the pages don't get ruined (I'm a messy cook!). I can also add notes, make changes, or write down comments for next time. This is a great way to stay organized in the kitchen!

I am starting a new part to the blog.... Family Friendly Recipe Review!

I love to try new recipes, I love experimenting and trying new things. Alot of the world in cooking is new to me since i spent the first 4 1/2 years or so of my marriage ordering take out and hitting drive thrus.

So, each week I will try a new recipe and rate it here on the blog. If you have a recipe you would like me to try, please send it to me!

Ok, so for our first week we have this recipe

Country Style BBQ Chicken (found on allrecipes.com posted by WolfWalker)

INGREDIENTS
1/2 cup chopped onions
1 cup ketchup
1/2 cup distilled white vinegar
1/4 cup brown sugar
1 tablespoon dry mustard
3/4 teaspoon salt
1/4 teaspoon pepper
6 skinless, boneless chicken breast halves

DIRECTIONS
-Mix the onions, ketchup, vinegar, brown sugar, dry mustard, salt, and pepper in a saucepan over medium heat. Cook 15 minutes, stirring occasionally.
-Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking dish.
-Arrange chicken in the baking dish. Pour sauce over the chicken.
-Bake 25 minutes in the preheated oven, or until chicken juices run clear.

My Review
This is definatly different than the bbq sauce from a bottle. The flavor is more ketchupy, but was very good. My husband and two children ate it up! It was great leftover too. I would recommend that using more chicken (or making less sauce) there was way more sauce than chicken.

I know, I know...Randalls again! For those of you who don't have "randalls" it does go by other names like Safeway, Dominics...there may be others. Anyway...

I went to get 16 packs of Bertolli, but they only had 6. The deal is, buy $30 worth of a list of products (Bertolli being one of them) and get a $10 OYNO cat. So I needed to get 15 packs to hit that number, however, for every 2 packs you buy you get a $2 OYNO, so I wanted to buy in even numbers. Anyway, they are free after the cats, but not a money maker wtih the $10 cat. They said they should have more tomorrow so we shall see.

Little Break

Well I guess you could call it a little break, I didn't hit up Wags and CVS on Sunday, I was SOOOO tired! Amanda and I had a garage sale this weekend to sell lots of our baby items, household items and extra stockpile items. Here are some pictures of Day 2. Day 1 was SOOO busy all day that we didn't have time to take pictures. We had a line of about 6-7 people waiting to check out for the first 2 or so hours, we also had about 7 people waiting for us to open at 7am! We each made a pretty penny so it was well worth it! DH also made us the clothing rack! Thanks babe :) We pulled out some more items from our houses for Saturday because we decided that we could part with more. I just wish I took pictures before Friday, it was insane :)

This has been a really busy weekend for me, so I am kind of lumping everything from the last few days into one.

Kroger

I love RX coupons :) I used a coupon from CVS (Kroger takes competitors coupons) and recieved a pharmacy credit of $25 on my Kroger card. My first transaction acutally was negative .85 because I forgot about overage from the Quaker coupon, so i quickly grabbed some candy, I HATE this... its such a habit I have to reach and grab the first thing I see that would eat up overage... I had more grocerys from the second transaction I should have grabbed, but in the middle of it, I freak and just grab. My second trans for $14.xx but that was out of my RX money, so nothing OOP :)

Next, Walgreens

I did another reach deal, but it is already in the garage sale pile :) I also got 5 BIC Soliel razors (only 4 pictured, one got lost in my car for the picture) they were on clearance forWags $3.59, we have $2.00 off coupons from the 3/15 SS (smart source) coupon inserts, AND Wags has the easy saver coupon for $2.00 of each pack, making this a $0.41 MM EACH. I also got a princess plate for DD to eat up overage :)

Today I did the Hunt's Tomato Sauce deal, where I got 11 cans and will be a .42 money maker :) WOO HOO!!

Target was awesome thanks to Amanda, they had these Gilette bodywashes on a side cap (LOL) for $2 and we had $2 coupons, so I got 10 of these (DH already stole one for the shower). And I am still using up my huggies coupons on wipes. The larger bag is $5.99 with a $5 coupon making it .99 and the other two tubs give .61 cents overage, woo hoo! I also forgot to picture applesauce, it is $1.62 and I used $1 target coupon and a .55 printable making it .07 :)

What to do with the food stockpile?

I am totally copying Amanda here (see her blog on the left) but I think it is good to show some things to do with your deals and stockpiles when regarding food. You can frequently get biscuits for free or close to it, so I always have a crazy amount of them. Here is one recipe that I do often for my kids, and the second is one I copied from Amanda.

Biscuit Pizzas

These are super easy. Just smash out the biscuit to the desired size. Add sauce (I use spaghetti because there is more of it and I can use the rest later, you can use pizza sauce though) then add toppings. I only had cheese tonight, so that went on top. Bake at 350° for about 12 minutes. Sometimes I bake the biscuits for a bit first, then add toppings to make sure it isn't too doughy.

Use plain biscuits for this, don't use butter or flaky. They aren't good that way!

Now, I copied Amanda's recipe for this, but I used scrambled eggs and cheese (I didn't have any breakfast meats) and I put them inside these little biscuit pockets. I plan to make a bunch and freeze them for DH, he can't drink milk in the morning, so these are perfect!

Well I figured that I should get back on the ball :) I have been couponing, just not blogging, shame on me! Well I am back to share and to track my deals :)

First, let me say that I LOVE GARAGE SALES!! Amanda and I will be having our second garage sale in a few weeks. (April 10th and 11th if you are in the area and interested) We sell off all of our extra stockpile to raise money for whatever. This time it is our trip to.... DISNEY WORLD! We will both be taking our families in September, we are more than excited! So here are some pictures of what I have together so far for my part of the sale. I still have to go through more of the house to get things going!

In the middle of the garage you can see a wooden clothing rack. My wonderfully, awesome husband DAVID made these for me! At the last garage sale we had so many clothes that stacking them on the tables just wasn't going to work, so we fixed that problem!!

Ok, some of my deals that I have done in the last few weeks are included in the above pictures (Garnier for instance, my whole laundry basket full..haha) But in the next few pictures are the diaper/wipes deals I have gotten (around .95 cents a pack after caregiver's rebate...woo hoo) And the dove deals that I have gotten this week. There are others, but they are already put away or mixed in with the garage sale stuff!

Also, I had the great idea to get some meat from Sams Club since its a great deal. What I didn't know is that to get the awesome price of $1.73/lb for 91/9 beef you had to buy 80+ lbs! So Amanda, Amanda's Mom and I decided to split it! We each ended up wtih 26.66 lbs for our families. I foodsaved mine into 1lb packs. hopefully this lasts us a while!!!

I finally got my Walgreens rebate! WOO HOO $104.71. Now next time it will jsut take a few days to load. It takes a bit of time to get it at first then the following months are almost instant. Woo hoo!!!

I just discovered the most amazing thing! Restaurant.com. Now, don't think I'm trying to make this blog all commercial or push stuff, I'm just really excited about it! DH and I had talked about just simply cutting out all restaurants. But we LOVE to eat out! This is the perfect solution.

Restaurants.com sells "gift certificates" but they really work more like coupons. When entering in the code "save" it takes 70% off the already low price. For instance, we love this little Italian place up the road. They have a $25 gift certificate for $10, with the "save" code it is knocked down to $3!! $3 for a $25 gift certificate. Now, they all have different exclusions. This one you have to spend $35 to use it. So you really pay $10 (assuming its exactly $35) and the $3 you already paid. $13 for a $35 dinner is certainly not bad :)

I am just too excited! I spend $13.90 and got 4 $25 gift certificates and 2 $10 ones. YAY
